Baked Sweet Potato Jackets

These oven-baked sweet potato jackets are great for a quick and easy snack, lunch, or dinner. You can eat them plain but I highly recommend trying one of my delicious bean fillings - black bean chili or butter beans and cherry tomatoes!

Ingredients
 

For the sweet potato jackets

  • 2 large sweet potatoes, scrubbed
  • olive oil , for drizzling (optional)
  • sea salt, for sprinkling

For the white beans and tomato filling

  • 1 can cannellini beans or butter beans, drained
  • 1 tsp olive oil
  • 1/2 cup cherry tomatoes
  • small handful of parsley , chopped
  • 1 tsp smoked paprika

For the black bean chili (check notes)

    Instructions

    Baked sweet potato jackets

    • Preheat the oven to 200ºC (400ºF).
      Arrange the sweet potatoes on a baking tray and drizzle a little olive oil over them. Sprinkle with a little sea salt.
    • Bake in the oven for 40-50 minutes or until they are tender and yield slightly when you press down with your finger.
    • Cut the sweet potatoes in half and stuff them with black bean chili or the cannellini bean filling.

    Cannellini beans and cherry tomatoes

    • In a frying pan over medium heat fry the cherry tomatoes in a little bit of olive oil until they start to soften.
    • Stir in the drained beans and the chopped parsley. Add a little sweet paprika and use it to top the sweet potato jackets.

      Notes

      • Filled your sweet potato jackets with my vegan black bean chili.
      • Pierce your sweet potatoes with a fork before baking to speed up the cooking time.
