Have you tried yet the Dalgona Coffee (aka whipped coffee?). This recipe went viral overnight on TikTok so if you never had it or heard of it, you're in for a treat my friend. It's also pantry friendly and the perfect coffee to have when you can't go out to a nice cafe.
Dalgona coffee basically it's a coffee latte type of drink made with instant coffee, sugar, water, and milk. The instant coffee is whipped together with the sugar and a little bit of hot water until frothy, it's usually served on top of iced milk. It originated in South Korea and went viral on TikTok almost overnight. No wonder why, it's basically #aestheticsgoals.
What does Dalgona mean?
It's actually called dalgona because the fluffy creamy coffee looks just like dalgona candy, which is a candy from South Korea that's just like honeycomb toffee.
Is whipped coffee unhealthy?
Even though it's really pretty, it's not the healthiest thing out there. It's ok as a treat once in a while but at whopping 13 grams of sugar per tablespoon of sugar used to make this coffee and high amounts of caffeine, it will send you on a sugar rollercoaster.
I tried to make this version of Dalgona as healthy as possible. Unfortunately, you can't skip the sugar as it won't fluff at all. I haven't tried any sweeteners but I guess that a granulated sweetener will work fine. You can also use half the amount of sugar, but the foam will be softer and the color a bit darker, but overall it works. I'm also using unsweetened coconut milk to make this vegan.
*NOTE: avoid white processed sugar for this recipe as white sugar is usually not vegan (it has been processed with bone char) and opt for raw sugar, coconut sugar, and even brown sugar.
If you'd like an even lighter version instead of adding milk, you can top a glass of iced water with the whipped coffee.
Can you use regular coffee?
I personally haven't tried it with other types of coffee but from my research, it has to be instant coffee. There's something about the instant coffee crystals that create the right texture & fluffiness. If you're sensitive to caffeine, you can use decaf instant coffee.
I used Nescafé, which apparently they are the ones who came up with frappé coffee which reminds me a lot of the greek frappé which is very similar but instead of adding the whipped coffee on top, you keep it at the bottom and then you top it off with either milk or water and lots of ice.
So you decided to jump into the Dalgona trend bandwagon but things are a little less than promising. Some reason that your coffee won't come up as marvelous as you've seen all over Instagram is due to a few reasons.
Why is my whipped coffee not whipping/frothing?
Make sure you have enough volume. If you notice that your coffee is not whipping properly try to double the amount. You are basically incorporating air into it so if there's barely anything in your bowl, it will be that much harder to fluff. Make sure you used instant coffee AND sugar. Use hot boiling water, that way the sugar will dissolve faster and it will help the mixture froth up more and faster.
Why is my whipped coffee runny?
Another reason why your coffee is not having the desired consistency is probably that you need to whip it a little bit longer. I really suggest you use either a hand mixer or a milk frother at least. You can definitely use a whisk and whip until your arm gets numb, it's a good arm workout though 😝
How to make Dalgona coffee
Add equal parts of instant coffee, sugar, and hot boiling water to small/medium-size bowl. Whisk everything together until stiff peaks start to form. (like in the image below)
Add ice in a cup and fill halfway with your favorite plant-based milk (I used unsweetened coconut milk). Top generously with the fluffy whipped coffee you just made, snap a quick picture for Instagram, stir thoroughly and enjoy!
Tips & variations
- Maple syrup - use maple syrup for a maple Dalgona, this sounds yum. Definitely a must-try!
- Mocha - for my chocoholics, there's something for you too. Make your whipped coffee as you'd normally do but add 1-2 tablespoons of cocoa powder. Delish!
- Less sugar - you can't, unfortunately, skip the sugar altogether but you can use half the amount or a granulated sweetener.
- Caffeine-free - just use instant decaf coffee.
- No milk - instead of milk, use iced water, much lighter if you prefer it like that.
Can you serve it hot?
Of course! You can make the whipped coffee as you'd normally do and pour it on top of a hot cup of milk.

Vegan Dalgona Coffee (Whipped Coffee)
- whisk or hand mixer
- 2 tbsp instant coffee
- 2 tbsp raw sugar
- 2 tbsp hot water
- 2 cups plant milk, I used coconut
- Add the instant coffee, sugar and hot water to a bowl.
- With a whisk or hand mixer whisk for 2-5 minutes until foamy and stiff peaks start to form.
- Add ice in two cups, pour milk halfway, and then top with the whipped coffee mixture. Stare at how gorgeous this coffee is and then stir and enjoy!
